The existing hood was undersized for the cooking line, and the grease duct had no access panels, meaning it had never been properly cleaned. The kitchen failed its ventilation inspection.
We fabricated and installed a stainless steel hood with baffle filters sized to the actual line, re-routed the grease duct with correct access panels and fire-safe cladding, and fitted a roof-mounted extraction fan matched to the new volume. Work was staged around service hours so the restaurant never closed.
The re-inspection passed first time, and the site is now on a scheduled degreasing programme.
